Canada's only officially bilingual province has cuisine as diverse as it linguistics. Mainstreet PEI host Karen Mair put together a panel of Maritime culinary experts to recommend the best cookbooks from the East Coast. Chef Richard Chiasson represented New Brunswick.

Richard Chiasson is an instructor at the Atlantic Culinary Institute in northern New Brunswick and an expert ice scuplture maker through Ice Creations.
