This week on The Next Chapter, she stepped up to answer the Proust Questionnaire. When asked about her idea of perfect happiness, Gail said: "My red couch, an episode of something I really like to watch on TV, my kids all cuddled up with me, and something delicious that I just cooked for myself." That's what made it onto the show. But The Next Chapter producer Erin Noel, a self-professed foodie, was dying to know what Gail's favourite meal was, so she asked... and scored a new recipe. Listen to Gail describe her favourite homecooked meal in the clip above and check out the recipe below. She promises it's so easy anyone can make it — and it's delicious!
Gail Vaz-Oxlade's Kaffir Lime Chicken
Whole garlic cloves
1 jar apricot jam
Kaffir lime leaves
1 jar salsa
Put the chicken in a baking pan. In a separate bowl, combine the remaining ingredients. Pour the mixture over the chicken and bake.
