Arugula and Tomato Salad

A simple salad with steak or pasta.

Ingredients

4 cups (1 L) coarsely chopped arugula or spinach
2 tomatoes, chopped
2 tbsp (25 mL) extra-virgin olive oil
1 tbsp (15 mL) minced red onion
2 tsp (10 mL) each red wine vinegar and balsamic vinegar
Pinch each salt and pepper

Preparation

In salad bowl, toss arugula with tomatoes.

In small bowl, whisk together olive oil, red onion, red wine vinegar, balsamic vinegar, salt and pepper. Pour over salad and toss to coat.
