Navy beans are not only delicious and creamy but are also a good source of folate and protein. This American comfort food is the perfect combination of savoury and sweet and is fantastic served with toast.
Ingredients:
3 cans (19 oz/540 mL each) navy beans, drained and rinsed
1 sweet onion, diced
2/3 cup (150 mL) bottled strained tomatoes, (passata)
1/3 cup (75 mL) packed brown sugar
4 oz (113 g) slab bacon, diced
2 oz (57 g) salt pork, diced
3 tbsp (45 mL) fancy molasses
1 tbsp (15 mL) sodium-reduced soy sauce
1 tsp (5 mL) dry mustard
Preparation:
In slow cooker, combine beans, onion, strained tomatoes, brown sugar, slab bacon, salt pork, molasses, soy sauce and mustard. Stir in 1 cup water.
Cover and cook on low until bubbly and thickened enough to scoop, about 6 hours.
