Ingredients:
2 tbsp (30 mL) extra-virgin olive oil
1 tbsp (15 mL) lime peel or lemon rind, grated
2 tbsp (30 mL) lime juice or lemon juice
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) pepper
6 cups (1.5 L) leaf lettuce, chopped
1 avocado, peeled and cubed
1/3 cup (75 mL) radishes, grated
1/3 cup (75 mL) red onions, sliced
Preparation:
In bowl, whisk together olive oil, lime or lemon rind, lime or lemon juice, salt and pepper. Toss with lettuce, avocado, radish and red onion.
