Ingredients:
1/3 cup (75 mL) rice vinegar or cider vinegar
1 tsp (5 mL) grated orange rind
1/4 cup (60 mL) orange juice
2 tbsp (30 mL) extra-virgin olive oil
2 tbsp (30 mL) liquid honey
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) pepper
3 cups (750 mL) finely shredded red cabbage
1 cup (250 mL) grated zucchinis
2 tbsp (30 mL) fresh parsley, chopped
Preparation:
In large bowl, combine vinegar, orange rind and juice, oil, honey, salt and pepper. Add cabbage, zucchini and parsley; toss to combine.
