3 apples, (about 1 lb 4 oz/625 g)
1/4 cup (60 mL) packed brown sugar
1/2 tsp (2 mL) cinnamon
6 scoops vanilla ice cream or frozen yogurt
Peel and core apples; cut each into 16 slices. Cut 4-foot (1.2 m) piece of heavy-duty foil; fold in half. Mound apples on 1 side close to centre; sprinkle with sugar and cinnamon. Fold foil over; fold in sides and seal to form packet. (Make-ahead: Let stand for up to 1 hour.)
Place on grill over medium heat; close lid and grill until apples are tender, about 10 minutes. Open packet and stir gently to distribute cinnamon. Serve over ice cream.
Ginger Pear Sundaes: Replace apples with pears. Replace cinnamon with 1/4 tsp (1 mL) ground ginger. Grill for 15 minutes.
Peach Sundaes: Replace apples with 4 peaches. Replace cinnamon with 1/4 tsp (1 mL) ground cardamom or nutmeg. Grill for 10 minutes.
