Ingredients:
2 cans (each 6 oz/170 g) tuna, drained
1 rib celery, diced
1 carrot, diced
1/3 cup (75 mL) light mayonnaise
3 tbsp (45 mL) pumpkin seeds
12 seedless green grapes, quartered
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) pepper
24 mini (2-1/2-inch/6 cm) whole wheat pita pockets
Preparation:
In bowl, combine tuna, diced celery, diced carrot, light mayonnaise, pumpkin seeds, grapes, salt and pepper. (Make-ahead: Cover and refrigerate for up to 24 hours.)
Cut 2-inch (5 cm) circle from 1 side of each mini pita to make container. Spoon rounded 1 tbsp (15 mL) tuna mixture into each pita.
