1-1/2lb (680 g) bison or beef strip loin grilling steak
1 tbsp (15 mL) Cajun Spice Mix
1 tbsp (15 mL) canola oil or vegetable oil
1 tbsp Cajun Spice Mix
Cajun Spice Mix:
1 tbsp (45 mL) dried thyme
2 tbsp (25 mL) paprika
2 tbsp (25 mL) packed brown sugar
1 tbsp (15 mL) ground cumin
1 tbsp (15 mL) dry mustard
1 tbsp (15 mL) hot pepper flakes
1 tsp (5 mL) salt
Cut beef into 36 pieces; transfer to bowl. Toss with Cajun Spice Mix and oil. Thread 3 pieces onto each of twelve 4-inch (10 cm) metal or soaked wooden skewers.
Place skewers on greased grill over high heat; close lid and grill, turning once, until medium-rare, 6 to 8 minutes, or until desired doneness. Let stand for 3 minutes before serving.
Cajun Spice Mix:
In small bowl, stir together ingredients. Store dry spice mixes in airtight containers for up to 6 months.
