1/4 cup (50 mL) dijon mustard
2 tbsp (25 mL) chopped fresh chives or green onions
1/4 tsp (1 mL) pepper
4 skinless salmon fillets (each 6 oz/175 g)
4 thin slices prosciutto (about 2 oz/60 g)
In small bowl, mix together mustard, chives and pepper; spread over both sides of salmon. Place fish, skinned side down, on prosciutto; wrap around fish.
Arrange fish, prosciutto seam side up, on parchment-lined or greased rimmed baking sheet; roast in 400°F (200°C) oven until fish flakes easily when tested, about 10 minutes. (Or place on greased grill over medium heat; close lid and grill, turning once, until fish flakes easily when tested, about 10 minutes.)
