The Pacific sea urchin is one of the world's most highly prized species of sea urchin.

Canada is among the top three producers of sea urchins, a delicacy that is "rich and creamy and tastes like the ocean." In 2016, more than eight million pounds were harvested on the west coast of Richmond, B.C.
