Kale, the super food!

KALE with Soy Ginger Dressing

1/4 cup (60 mL) extra-virgin olive oil
2 Tbsp. (30 mL) rice wine vinegar
2 Tbsp. (30 mL) sesame oil
2 Tbsp. (30 mL) tamari soy sauce
1 Tbsp. (15 mL) liquid honey
1 tsp. (5 mL) Dijon mustard
1 large clove garlic, minced
1/4 inch fresh grated ginger root
Toss 4 cups of shredded kale with Soy Ginger Dressing.
Saute in a wok or skillet until the kale has wilted. Serve hot.
