D is for Dinner - Pattypans

 

IMAG0107.jpgLUXY FARM'S FAMOUS SALAD DRESSING & MARINADE FOR PATTYPANS

Combine in a food processor then transfer to salad dressing container and shake well before use:


½ cup olive oil

1/8 cup balsamic vinegar

1/8 cup apple cider vinegar

1 shallot, minced

2 cloves garlic, minced or pressed

2 tsp dried or fresh dill

Juice of 1 lemon & 1 lime

2 dollops grainy mustard

¼ cup maple syrup or honey (or a combination of both)

Salt & pepper to taste


Marinate pattypan slices (3/4-inch thick) for 15 minutes. Barbeque, grill or fry on both sides until tender. Zucchini and eggplant slices also go well with this recipe.


STUFFED PATTYPANS

Hollow out small or medium sized pattypans and fill with your favourite chili, spaghetti sauce or seasoned ground beef. A simpler filling is to use the innards of the pattypan and mix with garlic and seasoning before stuffing it back into the squash. Bake until the pattypan is tender and the filling is hot. Garnish with grated cheese and fresh basil before serving.
