D is for Dinner - Tandoori Tofu

Tandoori Tofu, by Madhu Kumar

  • 350g firm tofu
  • 3 tbsp yogurt
  • 2 tbsp Tandoori masala
  • 1/4 tsp red chili powder
  • 1/2 tsp garam masala
  • 1 tbsp fresh ground ginger
  • 1 tbsp fresh ground garlic
  • 1 tbsp olive oil
  • 1/2 tsp salt or according to taste
  • thin rings of chili or chopped red and green pepper, to garnish

1. Cut tofu into 1-inch cubes.

2. Mix all ingredients (except tofu) in yogurt.

3. Add tofu and marinate for 1/2 hour.

4. Heat oil in a saucepan or a wok and stir fry tofu for 5 to 10 minutes.

5. Saute red and green pepper in a separate frying pan for 5 minutes.

6. Serve tofu on a platter with red and green pepper garnish.

Serve as a main dish with rice or naan. You can also make a sandwich or use it as an appetizer. Tandoori tofu can also be broiled for 5 minutes on each side.

D is for Dinner: Curried Squash and Apple Soup

Curried Squash and Apple Soup, by registered dietician Kathy Smart

  • 2 cups (500 ml) onion, chopped
  • 2 tbsp (30 ml) coconut oil
  • 1 tbsp (15 ml) ground cumin
  • 1 tbsp (15 ml) garam masala
  • 2 tsp (10 ml) ground coriander
  • 2 tsp (10 ml) sea salt
  • 6 cups (1.5 kg) butternut squash, peeled and chopped
  • 2 cups (500 ml) sweet potato, peeled and cubed
  • 2 cups (500 ml) apples, peeled and chopped
  • 6 cups (1.5 L) vegetable broth, low sodium
  • 1/2 cup (125 ml) coconut milk

 
1. In a large soup pot, sauté the onions and coconut oil until the onions are soft and translucent.

2. Add all spices, sea salt, vegetables, apples, broth and coconut milk to the onions.

3. Bring to a boil, then lower heat and simmer for 30 minutes until the ingredients are soft and tender.

4.Puree with a blender or immersion blender. Serve soup with a swirl of coconut milk on top

Soy Nut Butter Balls

Ingredients

Soy Nut Butter (you can use Soy Butter or Almond Butter as an alternative)
Grounded Flax Seed (it's best to grind it yourself)
Brown Rice Crispy Cereal
70-86% Cacao Dark Chocolate (100g)
Honey or Agave

Directions

In a large bowl mix 1 cup of Soy Nut Butter, 1 cup of Ground Flax seeds and 1 cup of Whole Grain Brown Crispy Rice Cereal (i.e. Nature's Path), 1/3 cup of Honey or Agave. Mix together and roll into balls (size about 1 TBSP)....
