D is for Dinner Beef Carpaccio Recipe

Makes 12 pieces:

6oz beef fillet

1 lemon

1 tsp Sea salt

1 tsp Black peppercorns

1 bch chopped Thyme

Micro Arugula

Extra Virgin Olive oil

Truffle oil

Parm. Chip (shredded parmesan baked on a oiled pie plate)

12 crostini sliced from Baguette baked with olive oil until toasted

 

Rub the beef in olive oil & season

Grill on very high heat to 'char' the outside without cooking inside

Marinate beef overnight with lemon juice & zest, thyme, salt & pepper, wrapped tightly in saran wrap

Slice paper thin pieces of the beef place on the crostini, toss the greens in truffle oil & lemon, place on top & garnish with the parm chip
