D is for Dinner: jerk sauce for Carivibe


carivibe logo.JPGTo warm us up for Saturday's Carivibe Road March and Beach Party we invited Banana's Caribbean Grill & Take-out manager Tessa Sharman to share the restaurant's jerk sauce recipe.

  • 2 tbsp thyme leaves
  • 1/2 cup pimiento
  • 6 cloves of garlic
  • 1/2 cup brown sugar
  • 2 bunches of scallions
  • 1/2 tsp nutmeg
  • 1/4 cup soy sauce
  • 1 tsp cinnamon
  • 5 tbsp lime or lemon juice
  • 6 scotch bonnet peppers
  • black pepper & salt to taste

1. Mix all ingredients in a food processor or blender on liquify
2. Marinate chicken for a minimum of 3 hours.

* to increase heat add more pimiento and scotch bonnet peppers.
