Peach Dressing on Peach Week

Chef Jenni Willems drove down from Saskatoon to blend some of Craig's peaches into a delicious peach vinaigrette dressing. Have a listen to how it's made, and then follow Jenni's recipe below.

2 large-ish, very ripe peaches, chopped with skins on
1 cup apple cider vinegar
1 cup oil (I used canola but Camelina would rock as well)
1 tablespoon minced fresh garden onion
1 clove minced garlic (optional)
1 or 2 tsp sugar to taste
1 tsp salt
1/4 cup toasted flax seed
1 tsp freshly ground pepper (mine was hickory smoked)

*Combine all ingredients in a blender and whir for a few seconds. This freezes beautifully and can also be used as a marinade.
